Dinner last night was yummy, and almost disturbingly easy:
-Preheat oven to 400F
-Dip chicken breasts into 1/4c of buttermilk (I'm going to try to substitue skim milk the next time)
-Mix 1/4c shredded coconut with 1/2c Japanese bread crumbs in a gallon sized plastic bag
-One at a time, coat chicken breasts with coconut mixture, pressing coating into the chicken. Place chicken in a well-sprayed baking pan
-Sprinkle chicken with remaining coconut mixture and press into chicken
-Bake for 15-20 minutes until done
-Serve with jasmine rice
